White Chicken Chili

White Chicken Chili

  • 3 Tbsp. olive oil
  • 3 c diced onion (about 2 large onions)
  • 2 large jalapeno peppers, diced small without the seeds and membranes
  • 2 small cans (7-8 oz.) diced green chilis, undrained
  • 4-5 garlic cloves, minced
  • 4 c (32 oz.) chicken broth
  • 4 c shredded, cooked chicken (I put 4-5 boneless, skinless chicken breasts in the crock pot for 4-6 hours, cool 10 minutes after cooked and shred with a fork while still warm)
  • 2 (15 oz.) cans cannellini beans, drained and rinsed
  • 1 Tbsp. fresh squeezed lime juice
  • 1 Tbsp. cumin
  • 1 tsp. dried oregano
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1/2 tsp. red chili flakes
  • avocado, grated cheddar cheese, sour cream, fresh cilantro leaves, optional for garnish
  1. To a large dutch oven or stockpot, add the olive oil and heat to medium.
  2. Add the onion, jalapeno, and green chilis, and saute until vegetables begin to soften, about 3 or 4 minutes, stirring frequently.
  3. Add the minced garlic and cook on medium low heat until fragrant, stirring often and watching carefully so the garlic doesn’t burn, about 3-5 minutes.
  4. Add the chicken both, chicken, beans, lime juice, cumin, oregano, salt, pepper, and red chili flakes, and bring to a boil on medium heat.  Turn down heat to medium low, and gently boil for 7-10 minutes.
  5. Ladle into bowls, and serve with desired garnishes.
  6. Refrigerate any leftovers.  Freezes well.
