Sweet Potato Fries

As soon as I saw this recipe I knew I would have to try it.  It is a recipe from Ina Garten, and every dish I have made from her has been amazing.  This one is no exception.

A lot of the local fast food chains are starting to carry sweet potato fries around here, and they are so good.  But, I didn’t realize how simple it is to make your own.  Her recipe only calls for 2 sweet potatoes, and it is surprising how many fries it makes.  It is definitely enough for 4 people, possibly even more because they are wedges and very filling.

Her secret ingredient is brown sugar.  At first that seemed so strange to put on top of fries, but actually you can barely taste it.  Mixed with the salt, it gives a very subtle salty/sweet flavor that puts these potatoes over the top.  They are such a pretty orange color, too – perfect for fall.  But I have a feeling I’ll be making these potatoes for winter, spring, summer, and everything in between.  If you’ve never made your own sweet potato fries, give this recipe a try.  I think you will be very glad you did!

SWEET POTATO FRIES

  • 2 medium sweet potatoes, peeled
  • 2 T olive oil
  • 1 T brown sugar
  • 1/2 tsp. kosher salt, plus extra for sprinkling
  1. Preheat oven to 450 degrees.
  2. Halve the sweet potatoes lengthwise and cut each half into 4 long spears.
  3. Place them in a plastic bag with the olive oil.  Seal the bag, and shake until all the potatoes are coated with the oil.
  4. Take them out of the bag, and place them in a single layer on a sheet pan lined with parchment paper.
  5. Combine the brown sugar and salt and sprinkle on the potatoes.
  6. Bake for 15 minutes and then turn with tongs.  Bake for another 10 minutes, until lightly browned.
  7. Sprinkle lightly with extra salt and serve hot.
