Strawberry Spinach Salad

I love this salad so much!  It is crunchy, sweet, tangy, and fruity.  This salad is on our Easter menu every year.  The spinach and colorfulness of it just seems to fit with the holiday and the beginning of spring.  Every time I make it, I get asked for the recipe.  With Easter coming up in the next month, I thought I would share the recipe with you, and make sure it’s on the blog in order to preserve our family traditions. (Do I hear a fiddler playing somewhere?) 🙂

There are a couple of reasons why this salad is so good.  First it does not skimp on ingredients.  Don’t you just hate it when you go to a restaurant, order a salad, and it barely has any of the yummy ingredients they said it contained?  That is the reason I order a salad (that and the dressing) so it is really disappointing when the salad has a total of 3 candied nuts or 2 pieces of avocado on it.  You can’t really tell by the picture, but this salad is loaded with almonds, Craisins, and strawberries.  No skimping here. The almonds give it a really crunchy texture which I love. Then, there is the poppy-seed dressing.  It’s wonderful!  It has that perfect balance between sweet and tart, and goes so well with the strawberries.

I serve this salad with ham, baked beans, potato salad, deviled eggs, rolls, carrot cake cupcakes, and a few other desserts.   I’m looking forward to seeing our family and friends that day. Everyone comes over after church, we eat and hang out, and then watch the kids look for Easter eggs in the backyard.  One of the benefits to living in Arizona is we get to eat outside.  The weather is usually beautiful this time of year, and hopefully this year will be the same, although Easter is a little earlier so we’ll see.  I would love to know what your Easter traditions are! It’s fun to hear how families celebrate the holidays. Strawberry Spinach Salad

  • Servings: 6-8
  • Time: 30 minutes
  • Difficulty: easy

For the Salad:

  • 9 oz. pkg. spinach leaves
  • 1 c Craisins
  • 1 quart strawberries (sliced)
  • 1 c slivered almonds

For the Sweet and Savory Poppy-seed Dressing:

  • 2 Tbsp. sesame seeds
  • 1 Tbsp. poppy-seeds
  • 1/2 c sugar
  • 1/2 c canola oil
  • 1/4 c white wine vinegar
  • 1/4 tsp. paprika
  • 1/4 tsp. Worcestershire Sauce
  • 1/2 tsp. salt, more to taste if desired
  1. In a large bowl, toss spinach leaves, Craisins, strawberries, and almonds together saving some out for garnish.
  2. Mix all dressing ingredients together in a large mason jar, and shake well until combined. Refrigerate until ready to serve.  Just before serving, pour over salad and toss.
  3. Garnish with more strawberries, almonds, and Craisins, if desired.
  4. Refrigerate any leftovers.
